A little background on the situation:

My mom contacted me a week ago and had seen these two Bengals were up for adoption. I live in a 2 bedroom apartment that allows cats and the second bedroom is unused. They brought the cats to my parents house on Sunday and we brought them to my apartment that night. In total they were in a vehicle for almost two hours. They are brothers and about 1 year old. We got to the apartment and left them in the carrier with the door open so they could walk out if they wanted to when we were sitting around. We left them in the spare room with water, toys, food, a litter box, scratching post and other places to hide and feel safe. On Monday my mom stayed with them at my apartment and left the door open to their room so they could leave if they wanted to. they came out and hid under the couch until I got home from work. That night we watched a movie and i held the one and my mom held the other and they slept on our laps. We put them into their room and went to bed, in the morning they had used the litter box for the first time and also eaten and drank water. Leo was on the top of a bookcase and let me per him and Luther was hiding under the futon and also let me pet him. They have slowly got better, yesterday (Wednesday) Luther came out from under the futon and rubbed against me when i got home from work and let me pet him for awhile. I left their door open so they could explore the apartment while nobody was there to scare them. Last night i left there door and my door open and when i woke up Leo was sleeping on a shelf in my room and Luther was under the futon in the other room again.

My questions:

Is this a good way to get them to open up? they still dart under stuff if i move quickly but are adventuring around the two rooms (never the kitchen, living room or dining room)

What should I feed them? They are a little bony but do have food available when they want it.

They get scared by noises in the apartment, is this normal for Bengals or just because it's new to them?

They have been to multiple homes in the past year but i have no intentions to get rid of them. They are very loving and beautiful but I am curious how to make them feel more at home.

Not an expert, so just going by my experience..

They like consistency, when we decided to get ours my wife was off work for a few weeks so had time to bond and gain trust. I know it's not always possible but if you can take a little time off to start with it might help. Oh and play, and I mean until your arm is sore from waving the fish on the stick or throwing the toy mouse for fetch (yes, some play fetch!). They love that interaction, even if it means rsi for you  Also might be worth considering some 'behaviour spray' to help keep them calm. I used it when we moved house and it helped.

Food, read the forums full of opinions. My take, we leave dry food out in the day plus half a pouch of wet food in the morning and early evening (all good quality, check with vet / forums). Also most days gets some raw meat from whatever meal is being cooked, never any cured meat though (ok, maybe the odd little treat  ) Being bony, first port of call is vet. However ours is about 8 months and very lean (long and slender) perfectly healthy. One of his half brothers who someone we know has got is a bit more stocky, some just stay a bit more true to their roots.

Noise, I would say ours seems to have a heightened sense with certain noises compared to other cats. They'll get used to the environment in time though. We moved house recently and you can hear ducks / geese in the morning over in the country park, he went mad every morning for the first week. Car engines and lawnmowers seemed to stress him a bit, but again he's more used to it.

Most importantly, enjoy them... they are so much fun and entertainment. Watched K2 stalking a daddy longlegs for half an hour last night! One of my mates who's a 'dog person' said our little man could easily convert him!

Bless you for taking in these babies. Their behavior is perfectly normal for this stage of the game. Coming to a new home is extremely stressful and by hiding, they feel safe. They will come out more and more and bond with you over time. It is very common for them to get frightened with strange noises. Their "guard" is up at this stage. Once they get into a routine, things will be fine. Mine doesn't like loud noises or even the TV volume turned up.

Food ... find out what they like to eat. This may mean going through several brands and types of food. But you will hit on something they will inhale and enjoy.

The way to make them feel more at home is to ratify your home. A tall cat tree is a must. They love to climb. You'll need other scratchers so they don't mess up your furniture. You need at least 2 litter boxes. They loves lots of places to sleep and you'll need a ton of toys for them.

Congratulations.

Forgot the cat tree is a must like Sherry says. Also reminded me with the TV, leave a radio or TV on whilst you're out so they can hear it... it will help them get used to a variety of 'normal' sounds.

Thank you for the replies. They are much more mobile now and seem like they are happy running around and playing. I have noticed that they have a lot of energy and they are truly amusing to watch running around my place. the only concern i have is that they appear to be on an opposite schedule as I am. They sleep when I am at work and getting home, they are waking up when im home and they are off the walls when i am asleep. I am there for 6-8 hours a day after work before i go to bed, should i just get them out and playing during that time? We play for an hour or so before i go to bed when they're starting to get around but as soon as i fall asleep they start running around like lunatics. Will they start changing to my schedule a little bit more or will they all be crazy at night?????

Babies get on an opposite schedule at times, too. Many kittens are nocturnal. Feel free to put them in the opposite side of the home (with a litter box and water at least) and toys and close the door! If they insist on being near you (which they will be at some point), they may just settle in. They have each other as playmates, so if one is awake, the other one will probably be awake as well. A heavy play session before bed should wear them out -- and maybe a snack would fill their bellies and make them sleepy (turkey maybe?). LOL
