i think it largerly depends on what would you shoot with your new camera.
i know a few good cameras - but i use mine mainly for high speed low light action shots

I have several digital cameras, but seem to take pictures only with my phone since I have it with me at all times.

If you want to take pictures of things you see. Say you and your friends at a park, a cell phone or basic camera will do almost the same as a vary expenses camera. I like to take pictures of things I can't see. Like action or a an expression or even a face of a spider so something with settings is a must. Most people will never look at a picture and think I should have used a different aperture setting I don't like how stuff is "IN" focus.

This is so true. I take the majority of my shots now with my Samsung Galaxy S3 and they come out wonderfully. Then I have a little point and shoot canon and I use when I don't want to lug my DSLR about. I also have a film SLR. Canon do a wonderful range of point and shoot, plus some that are a little more, that you can change settings on. Most people, in my opinion, buy DSLR's and never ever use them on the manual settings, so it's a bit of a waste.

With practice, you can take good photos with pretty much any decent camera. It's about getting the basics right, lighting, position, focus.

I use my Samsung Galaxy quite a bit - but it simply doesn't compare to my DSLR - recently I got a new Sony, A57 (from memory) am mega impressed and certainly isn't the most expensive out there. So many settings, gets close ups so clean and crisp compared to my previous sony. The colours are rich and I really don't need to edit anything other then the odd crop. Action shots are fully in focus (I put the camera on specific settings)
It has a great scene selection where it will tell you what each setting does and gives you a tip on what to focus on etc. Very user friendly.
