It's difficult to say with any certainly what the "right" thing to do is for some of these things. I've always been a believer in variety, because I believe that's what the cats would like, plus you never know when you may be forced to discontinue any of the foods for any number of situations and reasons. Also I feel better not having all my eggs in one basket nutritionally, so to speak, because it's difficult to put 100% of my trust in any one food. I think the downside is that the more you switch things up the higher probability you have of triggering a allergy or upset tummy, plus you end up spending more money, discovering and discarding the "duds".
To be clear though, I don't really "mix" wet foods though, just feed them different things on different days. With dry food I do sometimes mix them (like this morning I think I put some of the "trout" Blue Wilderness in with some of the "chicken" Blue Wilderness to spice things up).
As far as kitten/adult food. I think I started the bengals on adult food at 3 or 4 months or so. When I got Neytiri at age 13 weeks or so, she spent a couple of weeks in the "safe room" where she ate kitten food (same as she had at the breeders), then when she graduated out of there, and ate with the bengals, they all got the same (adult) food.
I don't think there is any real consensus as to whether any of this is "optimal", but that's what I chose to do, and I'd probably do something similar again.
