Just one additional thought - if the breeder suggested Orijen because that's what they use, it's best, at least to start with, to keep with what the kitten is used to. Then, if you want to change, you can introduce the change once they are settled in and eating happily. It was interesting to read, amongst Brian's very useful information, that he had looked into this brand and thought it a relatively good one, so at least the current food you would start with, is of decent quality.
Our breeder used Royal Canin wet and dry and we have just stuck with that, with the occasional half-meal of eg human-grade fish, heart or chicken (like every 2-3 days). And a chicken neck once or twice a week. I just couldn't find anything locally that was better quality, and wasn't confident about my ability to run the raw food diet properly. Just saying your choices will need to be filtered by what you can actually purchase where you are, what effort and hygiene you can handle, and what your cat decides is good food or not. All those factors can mean your best-researched plan might not work. You are admirably trying to do the very best for your cat - if you have to go to Plan B or Plan C, don't stress too much!
