I think cats prefer a smaller area for them as it makes them seem safe. I'd use an larger crate only for a "move" or a much longer trip. I have moved with a cat and we took breaks at the rest areas and took the kitty to a remote area with a harness and leash to get some exercise, see if she wanted to eat or go to the bathroom. A 2-hour trip shouldn't be a big deal for your kitty and as long as the carrier is comfortable, that's the way I'd travel. Most cats are not going to want to "eat" or use a litter box while the vehicle is in motion.
